The only reason botw doesnt run as well on yuzu is because the devs are busy playing it on cemu lol. Thats because you didnt activate the 60fps patch in cemu probably. That fixes alot of instability with the framerates. For example: CEMU without the fps++ patch: 25-30fps unstable.
